I had my first Den meeting with my Webelos I and it was almost my son’s 10th birthday so I thought I would bake up a treat. Being it was Scouts how could I go wrong with S’mores. S’mores are my favorite thing, but they can be messy and don’t transport. I decided to make a cookie.

I had just had a retreat and someone made chocolate chip cookies with chocolate candy bar pieces and marshmallows on top as a S’mores cookie. They were good, but I wanted to change it.

This is a cookie recipe base I use for Chocolate Chip and Peanut Butter Chip Cookies. Just skip the toppings and stir in your baking chips.

Makes 2-3 dozen (depends on scoop size)

Ingredients

Set Aside:
2 1/2 cups Flour
1 Tsp Baking Soda
1 Tsp Salt

Cream:
1/2 cup Margarine
1/2 cup Shortening
3/4 cup Sugar
3/4 cup Brown Sugar
1 Tsp Vanilla
2 Eggs

Topping:
Milk Chocolate Candybars (2 rectangles on each cookie..one bar does 6 cookies)
Large marshmallows (cut in half)

Preheat oven to 375 degrees.

Cream all the listed ingredients first then add the flour, baking soda, and salt. Use a cookie scoop or spoon and place dough balls on cookie sheet. Bake for 8-11 minutes.

Let set for a minute then move to a flour sack towel or cooling rack. Place two rectangles of a Milk Chocolate Bar and half a marshmallow on each.

These were a big hit and the boys were very excited that I had enough left for a second cookie! I wish the marshmallow melted more, but they really enjoyed dismantling them. (The chocolate takes a bit to set back up so I transported on large cookie sheets to my meeting.)
