I was looking around for something that I would like to eat and could make into a lighter version.

Found Pizza Pasta Casserole at Taste of Home

This is for a double batch..eat one and freeze one. Each serving is 301 calories according to the site. That’s not bad, but I knew I could do better.

It is really easy to lighten up a recipe by a few simple substitutions.

1. Swapping hamburger for ground turkey or chicken
2. Using cheese made from low fat milk and less than called for
3. Measuring…it’s easy to use more of something that you really need.

I made half of the recipe above for 1 13×9 pan
1 lb.Ground Turkey
3 cups Spaghetti Sauce
1/2 c Onion
1 cup Shredded Cheese Made from 2% milk
2 servings (34 slices) Turkey Pepperoni (chopped up)
Rotini Pasta 8 oz.

Spray 13×9 pan with nonstick spray. Put some spaghetti sauce in bottom of 13×9 pan. Brown the turkey, then add remaining spaghetti sauce and onion. Boil pasta while turkey is cooking take it out a few minutes before it is done according to package. Put drained pasta in pan, top with turkey and sauce then with cheese and chopped Pepperoni. Then bake at 350 uncovered 20-30 minutes or until heated through.

This was good. My hubby liked it a lot better than the boxed pizza casserole I usually make. I would recommend 1 more cup of sauce. The pasta soaks it up and it was a touch dry to me. Calories will vary on this. Every brand has different calories.

The original recipe was 301 calories per serving with it making 8-10 servings.

My lighter version if divided into 10 servings is 208 per serving!! Otherwise it was about 37 calories per ounce.

Easy, low calorie meal made in about an hour that can feed your family of 4 for two meals at least.
